1 Cup Quinoa
2 Cups Water
2 Small Persimmons - Washed and Cut
1 Apple - Washed and Cut
1/4 Cup Almond Milk or Any Milk
2 teaspoons Ground Cinnamon
2 teaspoons Brown Sugar
2 teaspoons Maple Syrup
Oil, Butter or Spray for pan
Other Optional Add Ins: Almonds, Pecans, Walnuts, Cranberries, Raisins and/or any extra sugar or syrup to taste.
Wash quinoa in a fine mesh strainer under running water. Add 2 cups water to a medium sized pot and stir in the washed and drained quinoa. Bring the water and quinoa to a boil then reduce the heat to a simmer and cover for 15 minutes, until the water is fully absorbed. Stir the milk into the quinoa and remove from heat. Meanwhile, wash the persimmons and apple, peel if you prefer, and cut into bite sized chunks. Spray, oil or melt butter in a saute pan over medium heat and saute the fruit until it is soft and beginning to caramelize. Just before removing from heat, stir in the brown sugar, cinnamon and maple syrup and immediately pour the sauteed fruit over the cooked quinoa. Mix together the fruit and quinoa, sprinkle any extras if adding and serve warm.
