Ingredients:

1/2 Cup Butter - Melted
4oz Dark Chocolate - Melted
1 Cup Coconut or Brown Sugar
2 Eggs Plus 1 Egg Yolk
2 Tablespoons Cocoa Powder
1 teaspoon Vanilla Extract
1/4 teaspoon Salt
10 Mini Peanut Butter Cups - Loosely Chopped

Directions:
Melt the dark chocolate in a sauce pan over medium/low heat or in a microwave for 30 second intervals. Slice the butter and melt it in with the dark chocolate, stir in the cocoa powder and remove mixture from heat. Meanwhile, in a standing mixer, beat together the eggs, egg yolk, sugar, vanilla extract and salt. Pour the chocolate/butter mixture into the mixing bowl, beat both together and then mix in the quinoa flour. Loosely chop the peanut butter cups and fold them into the batter while saving a few to sprinkle over the top. Pour the brownie batter into a generously sprayed or oiled 8x8 inch glass pan. Bake in a pre-heated oven at 350 for 30 minutes until a toothpick inserted in the middle comes out clean. Let the brownies cool completely before cutting them into squares to serve or store them in an air right container at room temperature.
