Ingredients:
1 1/4 Cup Oat Flour
1/4 Cup Flaxseed
1/4 Cup Bran Flour
1 Tablespoon Baking Powder
1 Tablespoon Brown Sugar
1 teaspoon Cinnamon
1/4 teaspoon Salt
2 Eggs
1 Cup Any Milk
1/2 teaspoon Vanilla Extract
2 Tablespoons Any Neutral Tasting Oil - Canola, Vegetable or Melted Coconut Oil work fine.
1 Medium Sized Apple - Chopped
1/2 Cup Raw Walnuts - Chopped

Directions:
Mix all of the above ingredients together (Excluding the chopped apple and walnuts) for a minute or so in a standing mixer. Once the batter is thoroughly combined, fold in the apple and walnut pieces by hand. In a large, non-stick pan or oiled skillet over medium heat, drop batter into desired sized pancakes. I like to make some big, some small and even funny shapes, it is totally up to you. Heat the pancake batter for about 1 to 3 minutes each side, flipping when the edges look brown and bubbly. Serve pancakes warm with syrup, butter, jam, yogurt, more fruit or whatever favorite topping you like.
