Directions:
In a standing mixer mix the egg, coconut sugar, almond milk and vanilla extract until smooth. In a separate bowl combine all of the dry ingredients except the dark chocolate chips. Pour the dry ingredients into the mixer with the wet ingredients and combine thoroughly. Fold in the dark chocolate chips by hand.
In an oiled pan over medium heat, drop pancake batter into any size/shape pancakes that you prefer. Heat pancakes for 3 minutes or so, flip and cook the other side for another 1 to 3 minutes.
