1 Cup Cornmeal
3/4 Cup Almond Flour
1/4 Cup Coconut Flour
3 teaspoons Baking Powder
1/2 teaspoon Sea Salt
1/4 Cup Honey - Melted
1 1/2 Cup Whole Milk
1/4 Vegetable Oil
2 Eggs
1/2 Cup Jalapenos - Diced
1/2 Cup Cheddar Cheese - Shredded - Plus more to sprinkle on top
Mix the first 5 ingredients in a large bowl. Add the milk, oil, melted honey and eggs to the dry ingredients. Fold in a 1/2 cup cheddar cheese and the diced jalapenos, do not over mix. Line 12 muffin tins with muffin liners and lightly mist them with non-stick spray. Fill the muffin tins to the top and sprinkle them with more cheddar cheese. Bake in a pre-heated oven at 400 for 18 to 20 minutes, remove muffins when they start to brown around the edges. Serve warm immediately or store at room temperature in an air tight container for later.
