Ingredients:
2 Cups Quinoa Flour - Buy or make your own by grinding in a coffee grinder
1 teaspoon Baking Soda
1/4 teaspoon Sea Salt
1/2 teaspoon Cinnamon
2/3 Cups Coconut Oil - Melted
1 1/4 Cups Coconut Sugar or Dark Brown Sugar
1 Egg plus 1 Egg Yolk
1 Tablespoon Almond Milk or Any Milk
2 teaspoons Vanilla Extract
3/4 Cups Dark Chocolate Chips
3/4 Cup Unsweetened Shredded Coconut

Directions:
In a separate bowl whisk together the quinoa flour, baking soda, sea salt, and cinnamon. In a standing mixer, beat together the egg and egg yolk, sugar, vanilla extract, melted coconut oil and almond milk. Add the dry ingredients to the mixer just until combined. If the dough seems a little dry you can add a little more milk a teaspoon at a time. Fold in the coconut and chocolate chips. Line 2 cookie sheets with parchment paper and drop 12 tablespoon sized cookies on each sheet. Bake the cookies in a pre-heated oven at 350 for 9 to 11 minutes. Once the cookies begin to brown, remove from the oven and let them cool. Store the cooled quinoa cookies in an air tight container at room temperature.
