1 Cup Quinoa - Washed in a fine mesh strainer and soaked for at least 8 hours
1/4 Cup Plus 2 Tablespoons Water
2 Garlic Cloves - Minced
2 teaspoons Season Salt
1 teaspoon Black Pepper
1 Tablespoon Any Dried Italian Herbs - Basil, Oregano, Thyme etc.
Directions:
Immerse the pre-washed quinoa in water, cover and let it soak for at least 8 hours. Once the quinoa has been soaked for 8 hours or longer, drain the water and add the soaked quinoa as well as all of the other ingredients to a food processor or a high-speed blender. Blend ingredients until the mixture resembles pancake batter. Pre-heat the oven to 450 degrees. Coat a cast iron skillet or an 8 inch round cake pan with a generous amount of olive oil and place it into a fully heated oven for 10 minutes before pouring the quinoa crust batter into the hot pan. Bake the quinoa crust in the oven for 20 minutes and then flip it over with a spatula and bake for another 10 minutes. While the quinoa crust bakes you can prepare your favorite pizza toppings, sauteing/grilling veges and/or meats, heating up your tomato sauce, shredding your cheeses etc. After the crust has been flipped and fully baked, take the crust out of the oven, spread on your pizza sauce, sprinkle on any extra herbs if you'd like, layer the shredded cheese and evenly distribute your cooked or raw toppings. Lastly, place the quinoa crust pizza back into the oven for 5 to 8 minutes to heat everything up a little bit, rotate and broil for 1 to 3 minutes until the cheese starts to brown and bubble. Remove from the oven, let the pizza cool for 5 minutes, then cut with a pizza cutter and enjoy.
