Ingredients:
1 Stick of Butter
1/2 Cup Coconut or Brown Sugar
1/2 Cup White Sugar or your choice Artificial Sweetener
1 Egg
1 teaspoon Vanilla Extract
1/2 teaspoon Baking Soda
2 1/4 Cups Oat Flour - Make your own in a blender or buy it at the store
1 Cup Chocolate Chips

Directions:
In a standing mixer cream together softened butter, sugars, vanilla and the egg, mix until smooth. In a separate bowl whisk together all the dry ingredients except for the dark chocolate chips. Add the dry ingredients to the wet mixture and mix until blended. Fold in the dark chocolate chips. Spoon the dough onto a cookie sheet lined with parchment paper at 350 for 10 to 12 minutes until the edges start to brown. Let the cookies cool for 5 minutes before serving. Store leftovers in an air tight container at room temperature.
