Ingredients: 1 Cup Peanut Butter 1 3/4 Cup Oats 1/4 Cup Oat Flour - Make your own by blending some oats in a blender 1/3 Cup Butter - Melted 1/4 Cup Raw Honey - Melted 1/2 Cup Coconut Sugar or Brown Sugar 2 Eggs - Pre-Beaten 1/2 teaspoon Baking Soda 1/2 teaspoon Vanilla Extract 1/2 Cup Dark Chocolate Chips 3/4 Cup M&M's - I used Peanut Butter M&M's |
Directions:
In a large bowl combine the oats, oat flour, coconut sugar, and baking soda. In a separate bowl melt the honey, butter, and peanut butter together, once they are combined add the vanilla extract. Pour the wet ingredients and the pre-beaten eggs over the dry ingredients and combine. Cover the dough and place it in the refrigerator for at least an hour to chill.
At the very end, fold in the dark chocolate chips and M & M's.
Drop tablespoon sized balls onto a cookie sheet lined with lightly oiled parchment paper. Bake the cookies at 350 for 15 - 20 minutes, until the edges start to brown. Once the Monster Cookies are baked, remove from the oven and let them cool for at least 5 minutes before serving. Store the extra cookies (If there are any ;) in an air tight container at room temperature for later.
