Ingredients:
3 to 4 oz Dark Chocolate
1/2 Cup Whole Milk
2 Tablespoons Coffee or Espresso

Directions:
Prepare a large bowl of ice water and set aside. Melt dark chocolate on the stove top in a double boiler or in a microwave for 30 second increments. Once chocolate is fully melted, add milk and coffee to it, continue to heat briefly and stir until fully combined. Once ingredients are thoroughly mixed together, place bowl with pudding mixture inside of the bowl with the ice water in it. Be careful to not let any of the ice water spill into the chocolate pudding mixture. While the bowl with the pudding is floating inside and on top of the ice water, whisk it by hand or with a hand mixer for 3 to 5 minutes. As the chocolate pudding is being whisked, it will first form big bubbles, then become smooth and thick. At this point, the chocolate mousse will be ready to transfer into individual bowls, cover and refrigerate. Refrigerate dark chocolate pudding mousse for at least 2 hours, but ideally overnight. Serve cold mousse plain or with toppings such as whip cream, chopped nuts, cacao nibs, chocolate chips, shredded coconut, berries or whatever you desire.
