I have had a 'Hate Hate' relationship with powdered sugar for some time now. My problems begin with the fact that I rarely ever make recipes that actually require it, however, when I do find one that want to make, I am immediately faced with a series of daunting dilemmas. Thoughts like, "Great, now I have to go out and buy this overly sweet, refined sugar, use a cup or so, and shove the rest of the box in the back of my already ridiculously crowded refrigerator, Uuuhhhggg!" start to run through my brain. Also, this may only be me, but for some reason, I always have weird amounts of powdered sugar left over. Every time I think that I am finally going to be free of the space hogging powdered sugar box, my dreams are dashed when I realize that I am three eights of a half cup short. It's a conspiracy I tell you!
For so long my only solution has been to avoid recipes with powdered sugar completely, but come on, no homemade cream cheese frosting? Ever? What am I, in prison?
With serious levels of elation and relief, I am more than excited to say that this is a dawning of a new day. Let all days previous be known as the 'Grey Days' and from this date forth, so shall the light, warmth and love, paint in the color like Picasso. Ahem, I give you...

how to make powdered sugar using any sugar!!!
True story. No joke. It's so easy, I cannot believe how much of my life I have wasted sans this knowledge.
Ingredients:
1 Cup ANY Sugar - Coconut Sugar, Stevia, Brown Sugar, Splenda, White Sugar - Really! Any Sugar!
1 Tablespoon Arrowroot or Cornstarch
Directions:
Put this ratio, half a cup at a time, into a blender or a coffee grinder and pulse until the mixture resembles powdered sugar. That's it. Use your powdered sugar exactly like regular powdered sugar, measurement for measurement. You can store pre-ground Any Sugar Powdered Sugar in the refrigerator in an air tight container, but fresh is best, in my opinion. In addition, I had the best luck using my coffee grinder over my blender, but that could be because my blender is literally on it's last leg. Enjoy!
