I often joke to people that I should change my blog name to "Real Life Quinoa" since over half of my recipes feature this magic grain. Truthfully, ever since I've discovered quinoa it has been hard for me to avoid using it. Besides its endless health benefits it is also so amazingly versatile. Quinoa has a ton of protein, twice as much fiber as other grains, all of the amino acids that our bodies require, and it's gluten free. Quinoa can be seamlessly subbed for rice, made into a sweet or savory dish depending on what it is accompanied with, and even made into quinoa flour for baked goods.
Since quinoa can be used in a ton of recipes buying it in bulk online or at your local health food store is the most economical way to go. At first I went out and bought quinoa flour from the store not knowing any better, but then I learned that anyone can quickly make their own quinoa flour by grinding uncooked quinoa in a coffee grinder. You can grind the exact amount of quinoa flour that you need for each recipe or grind extra for later and store it in an air tight container in the fridge for future use.
It's so easy, I can't believe I had not discovered this sooner! The cool thing that I've noticed about quinoa flour is that of the gluten free flour options it tastes the most like regular flour in baked goods. So now I'm totally hooked and loving all of the new recipes that it has opened up for me.
